Art Deco at the Beekman Hotel this Tuesday, July 28 6:30 to 9….features your very own Art Deco Diva, Polly Guerin whose Powerpoint talks about Eaton’s 9e…the Other Ile de France and the secret ingredient is a serving of Lady Eaton’s Red Velvet Cake, but if truth be known it is an old Louisiana recipe. However, you asked for it, so here is the recipe. RED VELVET CAKE: Take 1/2 cup of shortening, l and l/2 grandulated sugar, 2 tbsp. unsweetened cocoa, 2 tbsp red food colouring, 1/2 tsp salt, l tsp. vanilla extract, 2 and 2 and 1/2 cups all purpose flower (sifted), 1 cup buttermilk, 1 and 1/2 tsp baking soda, 1 tbsp. vinegar. Procedure: 1. In a large bowl, cream together shortening and sugar until light and fluffy. Add eggs, beating well. Make paste with cocoa and food colouring. Add to egg mixture. Add salt and vanilla. Alternately add flour and buttermilk, beginning and ending with flour. 2. Mix baking soda and vinegar. Fold into mixture, do not beat. 3. Pour batter into two greased 9-inch pans. Bake in 350F oven for 30 to 35 minutes, or until tester inserted in center comes out clean. Cool on wire racks. When cool, remove cakes from pan and split into two layers into which you will add frosting as well as the cake cover. FROSTING: 5 tbsp. all-purpose flour, 1 cup of milk, 1 cup butter (softened), 1 cup granulated sugar, 1 tsp. vanilla extract. In a small saucepan, combine flower and milk. Cook until very thick. Cool then frost cake. ENJOY!!!
